Ingredients (Serves 2-4)

1 large aubergine (eggplant), sliced

1-2 tbsp olive oil

Salt and freshly ground black pepper, to taste


How to Make It


1. Preheat the Oven

• Preheat your oven to 200°C.

• Line a baking sheet with parchment paper for easy cleanup.


2. Prepare the Aubergine

• Slice the aubergine into 1/2 inch thick rounds.

• Toss the slices with olive oil, salt, pepper and garlic powder.


3. Roast the Aubergine

• Arrange the slices on a baking sheet in a single layer.

• Roast for 15-20 minutes, flipping halfway through, until golden and tender.
