Char Siew Noodles

Char Siew Noodles is a hawker favourite — featuring springy egg noodles, caramelised BBQ pork, and a savoury sauce that ties everything together.


The best part? You can make this quick and easy at home using store-bought Char Siew! No need to marinate or roast — just assemble, toss, and enjoy.


Ingredients (Serves 2-3)


For the Noodles & Toppings:

300g egg noodles (mee kia)

250g store-bought Char Siew, sliced

1 bunch vegetables of choice, blanched

Pickled green chili


For the Noodle Sauce:

2 tbsp oyster sauce

2 tbsp light soy sauce

2 tbsp dark soy sauce (for colour)


How to Make It


1. Prepare the Noodle Sauce

• In a bowl, mix oyster sauce, light soy sauce and dark soy sauce. Stir until combined.


2. Cook the Noodles

• Bring a pot of water to a boil and cook the egg noodles for 1-2 minutes (or until just cooked).

• Drain and rinse under cold water to stop the cooking process.

• Quickly dunk the noodles back into hot water for 5 seconds (this makes them warm again and removes excess starch).


3. Assemble the Dish

• Toss the warm noodles with 1 tbsp of prepared noodle sauce together with 1 tbsp of lard oil.

• Plate the noodles and top with sliced Char Siew, pickled green chilis and blanched vegetables.
